Wild Rice Salad with Chicken

Wild Rice Salad with Chicken

1.5 c uncooked wild rice

1/4 c raspberry vinegar
1 T olive oil
1 T soy sauce
1 t grated orange peel (+ juice and fruit segments)
1/2 t pepper

2 c thawed white corn
1.5 c finely diced celery
1 c finely shredded carrots
3/4 c dried cherries, chopped
1/2 c finely chopped red onion
1 lb cooked, cubed chicken

2/3 c roasted salted sunflower kernels
