Baked Oatmeal with Fruit
Ingredients:
- 3 cups rolled oats
- 1/2 cup brown sugar
- 1/2 tsp salt
- 1 tsp baking soda
- 2 tsp cinnamon
- 3 Tbsp oil
- 2 eggs
- 1 tsp vanilla
- 3 cups milk
- 1 cup fresh cranberries (can be frozen)
- 1 cup blueberries (can be frozen)
- 2 bananas
- 2 apples, diced
Optional add-ins:
- Pepitas or other nuts
- Other berries
- Peaches
- Mango
- Coconut
- Ground flaxseed
- Applesauce
- Yogurt
Mix all ingredients in a 9x13 baking dish and bake at 350 for about 45 minutes.
